Carrot Cake for Company

Carrot Cake

This carrot cake for company receives a lot of compliments every time!
It is very moist and tasty!

I guarantee your guests will be asking for the recipe.

You will need two 9" cake pans and wax paper



3 cups of all purpose flour
2 cups sugar
1 teaspoon salt
1 TBSP baking soda
1 TBSP cinnamon
1 1/2 cup olive oil or coconut oil
4 large eggs beaten
1 TBSP vanilla extract
1 1/2 shelled chopped walnuts or pecan (extra needed for topping)
1 1/2 cup shredded, sweetened coconut flakes
2 cups finely grated carrots
1 cup of crushed pineapple with juice

Homemade Frosting:

1 package of softened cream cheese (8oz)
6 TBSP unsalted butter (1 stick), softened
2 1/2 cups confectioners sugar
1 teaspoon vanilla extract
1 teaspoon almond extract
2 TBSP lemon juice

Prepare cake

1)Preheat oven at 350 degrees Fahrenheit
  Place pan in middle of wax sheet and trace around to cut the paper to size, repeat for the other pan.
  Butter each round of wax paper and place at bottom of baking pan

2) Sift dry ingredient into a large bowl. Add oil, eggs and vanilla. stir well.
   Fold in the nuts, coconut, carrots and pineapple

3) Pour batter into each pan and bake on middle rack for 45 min.
Check with a toothpick/knife poking the center of each cake - should come out "clean" when cooked.
remove from pan and let cool on rack

4)For the frosting, mix cream cheese and butter in a bowl. Slowly sift in the confectioners sugar and beat until mixture is smooth (free of lumps)
Add vanilla, almond extract and lemon juice
Add more confectioners sugar to the frosting batter for more frosting and to thicken as well, as you will use all of it for the cake.

5) Before frosting cake, make small pokes in each cakes for frosting to penetrate and moisten the cake.
Frost cake and apply a generous amount on the bottom cake, (next stack the other cake), saving enough frosting for the top and around the edges

6) Decorate cake by sprinkling extra pecans or nuts on top of cake.

7) Refrigerate & Enjoy :)
